Catherine Cox- Champon 71,of Elizabethton, TN, passed away peacefully at her home on May 29th, 2026 in Elizabethton.

Born on June 27th,1954 in Hackensack, New Jersey to Marguerite and Alfred Cox, Cathy grew up in Hackensack and graduated from William Patterson University. She went on to teach elementary school. She was a member of St Elizabeth Catholic Church and loved her church family. She was a secular fransiscan as well and was a long time member. She was also known for her immeasurable faith and being giving of her time to her church, friends and family.

Cathy was known for being very loving, she had a laugh that could fill any room, she had a generous heart and loved unconditionally. She loved cooking especially big Italian meals for her family. She loved being with her church, family and community. They were really special to her.

Cathy is survived by her children Philip (wife Jennifer), Jessica(husband Hal), Helene (husband Jonathan), Ian (wife Danel), Catherine(husband Chris), Marguerite, Christianne (partner Alfred), Christian; 17 Grandchildren; and 9 siblings. She was preceded in death by her sisters Joanne, Terry, and Marguerite, her Aunt Marie Rose, and her mother Marguerite.

A viewing will be held on Monday, June 8th,2026 5-7pm at Memorial Funeral Chapel in Elizabethton. A funeral mass will be held at St Elizabeth Catholic Church 510 W C St Elizabethton, TN at 11am on June 09, 2026 and burial to follow at Happy Valley Memorial Park.
